Makes 2 servings
Prep time: about 25 minutes.
- 400g whole wheat pasta
- 2 medium carrots, thinly sliced
- 2 medium leeks, sliced
- 1 medium onion, diced
- 2 Tbs. vegetable oil
- Some parsley or dill
- 3 tsp. Lemon juice
- 1/2 cup vegetable broth
- 1-2 tsp. soy sauce
- Sour cream or tahini
Cook the pasta in boiling water. Meanwhile cut the veggies. Saut? the onion in a big pan until brown. Add carrots and leeks. Saut? the veggies briefly and then add the vegetable broth, lemon juice and soy sauce. Put the lid on and allow to cook for 5 minutes. Add the pasta and heat the mix briefly on a high flame.
Serve with sour cream and fresh dill or parsley on top. Fat is necessary to be able to digest the vitamins in the veggies, so be sure to add something like sour cream or tahini. If you prefer cheese, you can add some cheddar during the last heating session.
