Thai Baked Whole Fish recipe

You will need

  • 1 whole fish 1 ? – 2 kgs
  • coriander
  • ginger
  • lemon
  • garlic
  • chilis
  • mint
  • Bytessalt and pepper
  • oil
  • baking tray
  • aluminum foil
  • an oven ? most important!!

Okay, Buy fish cleaned scaled and gutted. Chop up an equal mix of ginger, garlic, chili and mix. Chop up a bunch of coriander and leaves of mint. Cut lemon into slices.

Pat dry the fish and cut diagonally across the fish with a sharp knife. Rub the garlic, chili, ginger, salt and pepper, mixture into the fish on both sides. Place some inside also.

Place the fish on a large sheet of foil in the middle. Place lemon slices on the fish. Sprinkle coriander.

Fold up the foil to make a parcel leaving room for the hot air to steam the fish. Double fold the top seam of the foil.

Heat the oven to 180 and bake for about 20 ? 30 minutes. The foil will have risen to resemble a dangerous camping pillow.
Delicious with rice and nice white wine.
