This dish serves one and is colorful to the eye and the palette.
- 1 cup rice
- 1 cup water
- about 1/4 cup of lentils
- Vegetable broth cube
- Some raisins
- 1/2 tsp. curry powder (or more if desired)
- Cooked carrots*
Preparation depends on whether your rice is the instant or regular kind. For instant you?ll add the rice 5-10 minutes before the dish is done. Otherwise you?ll want the rice to cook 20-40 minutes.
Add the vegetable broth cube to 1 cup water and bring to a boil. Add the rice and lentils (lentils are usually good after 20 minutes or less of cooking). Add any optional ingredients. About 5 minutes before the dish is done add the raisins and curry powder.
