Makes 2 servings
Prep time: about 15 minutes.
- One 15 oz. can of black beans, drained and rinsed
- 2 Tbs. olive oil
- 1 medium onion, diced
- 1 clove garlic, diced
- 2 carrots, thinly sliced
- 2 small tomatoes, diced
- Sour cream, tahini or mashed avocado
- Salt and freshly ground pepper
Heat the olive oil, onion and garlic in a frying pan for a few minutes. Add black beans carrots and let it heat for 5 to 10 minutes, stirring occasionally. Meanwhile dice the tomatoes and parsley. Once the bean mixture is heated, add pepper and salt to taste. Serve the tomatoes on top of the beans. Top with sour cream, tahini or avocado, and garnish with parsley.
