Makes 2 servings
Another quick and tasty treat. Again, I recommend real parmesan cheese as opposed to the fake stuff in a can. This recipe requires a toaster oven but could also be done in a regular oven as long as you can wait for it to heat up.
2 whole pita pockets (the full circle, not half pockets)
1/2 cup hummus
1/2 tomato, sliced
1/4 cup parmesan cheese
7-8 black olives, sliced
Take one whole circular pita pocket and heat it in the toaster for about 30 seconds. Spread half the hummus on the pita. Top with sliced tomatoes, and black olives. Sprinkle parmesan on top and put back in the toaster for about 2 minutes. Cut into quarters with a pizza cutter and enjoy.
For a little variety, try using various flavors of hummus or try some other toppings.
