Tabouli Wraps

Makes 2 servings

This is quick, easy, and tasty. If you can afford it, real parmesan cheese tastes infinitely better than the fake stuff.

1 1/2 cups prepared tabouli (you can use any mix – I like Fantastic Foods – or make your own)

2 large tortillas

4 pieces green leaf lettuce

1/2 medium tomato, chopped

1/4 cup parmesan cheese, grated

Several black olives, sliced (optional)

Heat the tortillas (one at a time) in a large frying pan for about 20 seconds on each side. Remove the tortilla from the pan and line it with 2 pieces of lettuce. Place 2 spoonfuls of tabouli in the center and top with some chopped tomato and grated cheese and olives.

Wrap the tortilla in this order to prevent to much filling from squishing out when you take a bite: Fold one side over, then fold the bottom up, then fold the other side over. You can fold down the top if you choose. Use a toothpick to keep it together while you prepare the second serving.
