Color Wraps

Prep time: about 20 minutes. This is a great party food because of all the colors involved. You can leave the prepared ingredients on a table and let guests make their own wraps. Just have plenty of napkins on hand!

  • Tortillas
  • Flesh of 1 medium avocado
  • Hummus (ready made or a prepared mix)
  • 7 tsp. soy sauce (2 tsp. lemon juice could be substituted for 2 tsp. soy sauce)
  • Green leaf lettuce
  • Fresh cilantro and/or parsley, chopped
  • Tomato
  • Mushrooms, sliced or quartered
  • Carrots, sliced
  • Red & white cabbage, chopped
  • Apples
  • Olives
  • 1 package firm tofu
  • Salt
  • Freshly ground pepper

Make the hummus, if necessary, as described on the package. Cut the tofu in cubes and put it in a bowl with 5 tsp. soy sauce. Let it soak for 10 minutes. Meanwhile mix the avocado flesh with 2 tsp. soy sauce, or lemon juice. Fry the tofu cubes in a pan until they get brown and crusty. Heat the tortillas in the oven by wrapping them in a clean kitchen towel and placing them in a baking dish.

To make the wraps, spread hummus and avocado cream on the tortillas and place a few lettuce leaves on top. Top with the veggies of your choice (those listed above are suggestions) and sprinkle some cilantro or parley on the whole thing. Add the tofu cubes and fresh pepper. Roll the tortilla if you can; if not just flip it over once and enjoy!
